Docking is done which means pocking numerous small holes in the pastry sheet. This is conducted because you want to prevent bubbles of air from being formed so as to create uneven surface and damage structure of pie crust. Docking is done when there is crusting of blind-baking of pie.


  • Slight soft unsalted butter 150g
  • Caster sugar 100g
  •  Large eggs 2
  • Plain flour 300g


  • In the bowl put butter with cream and sugar together using electric mixer that is hand-held or with the usage of wooden spoon. The mixture should not be too fluffy. Only make them together.
  • To the butter mixture, add egg. Beat till smooth. It should fully incorporate.
  • Mix flour with salt pinch. Gradually fold it into butter mixture, one after another, till absorbed. You should be sure of the fact that sticking of butter to bowl sides should be incorporated you should not worry if pastry becomes crumbly.
  • Turn pastry into floured lightly surface. Knead it till together it comes quickly. All you need here is gentle and light touch. The pastry becomes tough if too much work is done.
  • The dough is wrapped in cling film. Chilled for 1 hour. The resting sage is important. This is because the pastry is easily rolled into shape and it will not shrink while it is being cooked.
  • From fridge the pastry is removed. Then it is placed on a surface that is floured lightly and along with a rolling pin that is used for flouring, please roll it to the required thickness. Regular turning is done so as to achieve a shape that is quite even before usage of lining the tart tin.
